Nel Centro Agroalimentare Roma lavorano numerose aziende di grossisti e produttori dei comparti ittico ed ortofrutticolo, che commercializzano ortofrutta e pesce all’ingrosso, garantendo approvvigionamenti giornalieri di merce (soprattutto fresca) a prezzi di mercato ai mercati rionali di Roma, ai componenti della Grande e della Distribuzione Organizzata in genere (GDO – DO), a segmenti della ristorazione, hotel, catering (Ho.re.ca), a piccoli supermercati, alle mense della città di Roma, della provincia e dei territori di Regioni limitrofe, più significantemente di Umbria, Abruzzo, Toscana.
L’assetto organizzativo, la divisione dei ruoli e la configurazione gerarchica interna a CAR, sono state elaborate proprio per fornire risposte tempestive e qualificate alle diverse esigenze poste giornalmente dagli operatori del Centro Agroalimentare Roma, dalla loro clientela, più in generale dal mercato.
Many wholesalers and fish fruit and vegetable companies work in the CAR centre, selling wholesale, guaranteeing daily provisions at market prices to Rome district markets, large retailers, catering segments, hotels, food services (Ho.re.ca.), canteens and little supermarkets of Rome, its province and neighboring regions, especially Umbria, Abruzzo and Toscana.

Price Determination: Due to the high numbers of negotiations and exchanges of large amounts of fresh products, the Centre influences the determination of prices - already competitive because of the internal competition between farm producers and the wholesalers themselves. In addition the Management trust draws up Price Lists for both fruit and vegetable and fish markets, depending on a constant survey of the negotiations between customers, buyers, and wholesalers.
Local agriculture valorisation: An important strategic action to enhance the value of local products such as
Hygienic Sanitary Tutelage: The centre, through its highly internal professional hygienic device, makes daily controls viewing the products and also taking samples from bulk amounts of food in the laboratories, as well as rigorous monitoring on fish, fruit and vegetables to be consumed.
Quality and Freshness Tutelage: CAR monitors on quality and the freshness of products through the competence of those who transfer and work food products and its functional and technological machines. Agecontrol, a limited company entirely public, controls the quality and respect of the law in force. It has replaced the Foreign Trade Institute
Storage Activity: CAR has created its own refrigeration stations and cold stores to offer a correct and safe conservation of goods waiting to be sold, delivered or converted.
Manufacturing and Processing:
Additional services: CAR, as a logistic pool, beyond services linked to commercial market activity, also offers other services, for example: delivery service to the dealer, a bank counter within the market, an Entrance Centre which constantly supervises employees and workers coming in the market. There are also various refreshment bars, a petrol station, a highly professional mechanic workshop for repair services of cars and trucks etc.
Organic Farming: Since 2007 there has been a distribution platform for different kinds of Organic products, including their processing, storage and refrigeration.

Tra le funzioni di primaria importanza ricoperte dal Centro Agroalimentare Roma abbiamo:
